Ingredients
 

  • 1 large firm peach, peeled and diced (Roughly 3/4 cup)
  • ½ cup crushed pineapple, well drained
  • 1 large ripe and firm plum tomato, seeded and diced
  • 2 tablespoons granulated sugar
  • 2 tablespoons apple cider vinegar
  • ½ small jalapeno pepper, seeded and minced
  • ½ teaspoon crushed red chili flakes
  • 1 clove garlic, peeled and pressed
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions
 

  • Use a potato peeler to peel peach or dip into boiling water for 30 seconds then transfer to ice water. Rub peel off.

  • Combine all ingredients in a medium bowl. Cover tightly and refrigerate overnight. Enjoy with your favorite tortilla chips!
