6 Ingredient Pasta Salad

This is a great recipe if you like to prep some pasta and keep in the fridge just for times when there is no time to cook, but need a satisfying and healthy meal for one. Don't have arugula on hand? No problem, substitute some fresh spinach instead! The great thing about a simple pasta salad is that you can make it unique with ingredients you have on hand. A good Italian dressing is the key!

Ingredients
  

  • 1 cup elbow pasta, prepped and cooked ahead of time
  • 1/4 cup mozzarella cheese, cubed
  • 2 tablespoons black olives, sliced
  • 1 cup baby arugula
  • 1/2 cup grape tomatoes, halved
  • 2 tablespoons zesty Italian dressing

Instructions
 

  • In a bowl, combine cooled or chilled cooked pasta with all ingredients. Gently toss to coat all with the Italian dressing. Enjoy!
