Ingredients
 

For the Cake
  • 2 tablespoons unsalted butter, room temperature
  • cup granulated white sugar
  • 2 tablespoons vegetable oil
  • 1 larger egg, room temperature
  • 1 tablespoon milk, whole or 2%
  • ¼ teaspoon vanilla extract
  • ½ teaspoon finely grated lemon rind
  • ¾ cup all-purpose unbleached flour
  • ½ +1/4 teaspoon baking powder
  • 1 pinch salt
  • 2 medium ripe plums, though not over-ripe, pitted and sliced into thin wedges
For the Streusel
  • ¼ cup all-purpose unbleached flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • ¼ teaspoon cinnamon
  • 2 tablespoons unsalted butter

Instructions
 

  • Set oven to 350 degrees. Grease then flour a 1-quart glass baking dish.
  • In a medium bowl, cream sugar and butter by hand using a small whisk. Add vegetable oil and egg. Add remainder of wet ingredients and mix well.

    2 tablespoons vegetable oil

    1 tablespoon milk
    1/4 teaspoon vanilla extract
    1/2 teaspoon finely grated lemon rind
  • In a small bowl, sift flour, baking powder and salt. Add in 3 parts, just mixing until incorporated. Batter will be thick.
    3/4 cup all-purpose unbleached flour
    1 pinch salt
    1/2 +1/4 teaspoon baking powder
  • Press evenly into greased and flour dusted baking dish. Layer plum slices in two rows.
    2 medium ripe plums
Make Streusel
  • Add all ingredients for streusel in a small bowl. Use fingers to work butter in the sugars until crumbly and spread evenly over the plum slices.
    2 tablespoons granulated sugar
    2 tablespoons brown sugar
    1/4 teaspoon cinnamon
    2 tablespoons unsalted butter
    1/4 cup all-purpose unbleached flour
  • Place in a 350 degree oven for 35-40 minutes. After 20 minutes, turn dish so that cake cooks evenly. At 35 minutes, check for doneness with toothpick or small knife, Cake should be slightly browned. Allow to cool 10 minutes and enjoy with a dollop of whipped topping.
