For the Streusel
¼cupall-purpose unbleached flour
2tablespoonsgranulated sugar
2tablespoonsbrown sugar
¼teaspooncinnamon

Instructions
Set oven to 350 degrees. Grease then flour a 1-quart glass baking dish.
In a medium bowl, cream sugar and butter by hand using a small whisk. Add vegetable oil and egg. Add remainder of wet ingredients and mix well.

2 tablespoons vegetable oil
1 larger egg
1 tablespoon milk
1/4 teaspoon vanilla extract
1/2 teaspoon finely grated lemon rind
In a small bowl, sift flour, baking powder and salt. Add in 3 parts, just mixing until incorporated. Batter will be thick.
3/4 cup all-purpose unbleached flour
1 pinch salt
1/2 +1/4 teaspoon baking powder
Press evenly into greased and flour dusted baking dish. Layer plum slices in two rows.

Make Streusel
Add all ingredients for streusel in a small bowl. Use fingers to work butter in the sugars until crumbly and spread evenly over the plum slices.

1/4 teaspoon cinnamon
2 tablespoons unsalted butter
1/4 cup all-purpose unbleached flour
Place in a 350 degree oven for 35-40 minutes. After 20 minutes, turn dish so that cake cooks evenly. At 35 minutes, check for doneness with toothpick or small knife, Cake should be slightly browned. Allow to cool 10 minutes and enjoy with a dollop of whipped topping.
