Set oven temperature to 350 degrees. Spray 8 muffin tin cups with non stick cooking spray.
non-stick cooking spray
Open refrigerator biscuits and separate. Cut each biscuit into 6 (1-inch ) pieces.
1 tube Pillsbury Grand Refrigerator Biscuits
Fill each muffin tin cup with 3 of the 1-inch pieces.
Spread a thin layer of pesto over each piece, followed by a 1/2-1 tablespoon pizza sauce and 1 tablespoon grated cheese.
1/4 cup pesto
1 cup pizza or marinara Sauce
1 cup mozzarella cheese
Repeat exactly the same for a SECOND layer. Each muffin cup will have 6 pieces of biscuit (equivalent to 1 whole biscuit) and two layers of pizza toppings. You should have a total of 8 biscuits all topped with last ingredient of grated mozzarella cheese.
Place tin in center oven and bake for 10-12 minutes or until the cheese starts bubbling and the biscuit looks golden brown. Remove and allow to cool in muffin tin several minutes. Gently pull out and serve hot. Heat a bit more of your pizza sauce for dipping!
