1cupelbow pasta , cooked and chilled, approximately 1/3 cup dried pasta...see prep ahead pasta
3-5stripscenter cut bacon, cooked and chopped
1cupromaine lettuce, chopped
½cupcherry or grape tomatoes, halved
1tablespoonflat leaf parsley, chopped
1thin slice from a red onion, then sliced into strips
Ranch Dressing
2tablespoonsmayonnaise
2tablespoonswhole milk
1tablespoondry buttermilk powder
½tablespoondried parsley flakes
½teaspoondried dill weed
½teaspoononion powder
½teaspoongarlic powder
¼teaspoon dried chives
¼teaspoonsalt and pepper, each
Instructions
Ranch Dressing
Whisk all ingredients for the dressing in a bowl and set aside.
2 tablespoons mayonnaise
2 tablespoons whole milk
1 tablespoon dry buttermilk powder
1/2 tablespoon dried parsley flakes
1/2 teaspoon dried dill weed
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried chives
1/4 teaspoon salt and pepper
Salad
Cook elbow pasta according to package instruction 1 minute less for firm pasta. Rinse in cold water and set aside.
1 cup elbow pasta
Add bacon to a skillet and set over medium high. Cook about 5 minutes on each side. Set aside to drain on paper towel. Pat to remove excess fat. When cooled, roughly chop. Set aside.
3-5 strips center cut bacon
To ranch dressing bowl, add pasta, lettuce, tomato, parsley, and onion and gently combine. Leave covered in refrigerator until ready to eat. When ready, gently mix in bacon before eating. Enjoy!

Lighten this up! Substitutions for ranch dressing: 3 tablespoons greek yogurt for mayo; 1 tablespoon 2% milk for whole milk. Ditch the buttermilk powder. Substitutions for Salad: Whole wheat elbows in place of regular pasta; turkey bacon in place of pork bacon.
