Ingredients
- 4 tablespoons olive oil, divided
- ¼ cup red onion, diced
- ¼ cup red bell pepper, diced
- ¼ cup black olives, chopped
- 1 teaspoon juice from a jar of jalapeno slices
- 1 clove garlic, diced
- 1 teaspoon chili powder
- 1 teaspoon paprika, try smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon oregano
- ¼ teaspoon celery salt
- ¼ teaspoon red pepper chili flakes
- ⅛ teaspoon ground sage
- ¼ teaspoon each salt and pepper
- 1 cup canned Tri Bean blend (black, kidney and pinto), rinsed and drained
- 2 tablespoons Italian seasoned bread crumbs
- 1 large egg, beaten
- ¾ cup rolled oats
- 1 tablespoon fresh parsley, minced
Instructions
- Add 2 tablespoons olive oil to a cast iron or sauté pan over medium heat. Once hot, add raw veggie ingredients and cook until soften, a few minutes.1/4 cup red onion1/4 cup red bell pepper1/4 cup black olives
- Add juice garlic and all the spices (except the parsley) and stir for 1 minute. Transfer to a medium mixing bowl and allow to cool.1 teaspoon juice from a jar of jalapeno slices1 clove garlic1 teaspoon chili powder1 teaspoon paprika1/2 teaspoon ground cumin1/2 teaspoon oregano1/4 teaspoon celery salt1/4 teaspoon red pepper chili flakes1/8 teaspoon ground sage1/4 teaspoon each salt and pepper
- Once cooled, add the beans and gently mix. Add all remaining ingredients and mix with hands then form 3 patties.1 cup canned Tri Bean blend (black, kidney and pinto)2 tablespoons Italian seasoned bread crumbs1 large egg3/4 cup rolled oats1 tablespoon fresh parsley
- Place patties on small baking sheet or large plate lined with parchment paper and leave covered in refrigerator for 20-30 minutes.
- Add 2 tablespoons to skillet or sauté pan and heat over med/high. Once oil is hot, cook patties about 3 or 4 min on each side.
- Serve with smash potatoes or chips.
