EQUIPMENT SUGGESTIONS
3 quart slow cooker
Ingredients
- 8 ounces pork tenderloin
- 1 drizzle olive oil, extra virgin
- 1 teaspoon dried oregano
- ¼ medium onion
- 1 cup diced tomatoes
- ¼ cup can chopped green chilies
- 1 clove garlic, minced
- ¼ teaspoon chili powder
- ½ teaspoon cumin
- ¼ cup beer
- 2 tablespoons tomato paste
- 1 wedge lime
- 1 tablespoon cilantro, chopped
- salt and pepper , to taste
- 8 (7 inch) flour tortillas
- assorted taco toppings, avocado, shredded lettuce, grated cheddar cheese
Instructions
- Rinse pork tenderloin and pat dry. Drizzle with olive oil and rub with oregano. Set aside.
- Layer slow cooker with onions, tomatoes, green chilies, garlic, chili powder, cumin and beer. Cook on low until pork is tender and easily pulls apart.
- Remove the pork and pull it apart with 2 forks.
- Before adding pork back to slow cooker, add the tomato paste to thicken sauce in the slower cooker. Return pork to slow cooker for 30 minutes.
- Season with salt and pepper to taste. Just before serving add a squeeze of lime juice and sprinkle with cilantro.
Assemble Tacos
- Warm tortillas for 1 minute in microwave between 2 very lightly dampened paper towels.
- Add 1/4 cup of pork filling to each tortilla and add favorite taco toppings such as avocado, shredded lettuce, grated cheddar cheese, sour cream and black olives. Finish with a squeeze of lime. Enjoy!
