Ingredients
 

  • 8 ounces pork tenderloin
  • 1 drizzle olive oil, extra virgin
  • 1 teaspoon dried oregano
  • ¼ medium onion
  • 1 cup diced tomatoes
  • ¼ cup can chopped green chilies
  • 1 clove garlic, minced
  • ¼ teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ cup beer
  • 2 tablespoons tomato paste
  • 1 wedge lime
  • 1 tablespoon cilantro, chopped
  • salt and pepper , to taste
  • 8 (7 inch) flour tortillas
  • assorted taco toppings, avocado, shredded lettuce, grated cheddar cheese

Instructions
 

  • Rinse pork tenderloin and pat dry. Drizzle with olive oil and rub with oregano. Set aside.
  • Layer slow cooker with onions, tomatoes, green chilies, garlic, chili powder, cumin and beer. Cook on low until pork is tender and easily pulls apart.
  • Remove the pork and pull it apart with 2 forks.
  • Before adding pork back to slow cooker, add the tomato paste to thicken sauce in the slower cooker. Return pork to slow cooker for 30 minutes.
  • Season with salt and pepper to taste. Just before serving add a squeeze of lime juice and sprinkle with cilantro.
Assemble Tacos
  • Warm tortillas for 1 minute in microwave between 2 very lightly dampened paper towels.
  • Add 1/4 cup of pork filling to each tortilla and add favorite taco toppings such as avocado, shredded lettuce, grated cheddar cheese, sour cream and black olives. Finish with a squeeze of lime. Enjoy!
