EQUIPMENT SUGGESTIONS

Food processor

Ingredients
 

  • 15 medjool dates, pitted
  • 1 pinch sea salt
  • 2 cups raw pecans
  • 1 cup old fashioned oats
  • cup nut butter
  • 2 tablespoons chia seeds
  • ½ teaspoon cardamom
  • ¼ cup shredded unsweetened coconut
  • 2-3 tablespoons cocoa nibs , (optional)

Instructions
 

  • Split all 15 dates along the center to remove the seeds. If the dates are fresh and soft, they can go directly into the food processor. If they are quite firm and older, soak them for 5 minutes in cold water to soften first. Add a pinch of salt and begin pulsing to chop them up.

  • Add the pecans and continue pulsing then add rest of ingredients and pulse until all are well combined.
    2 cups raw pecans
    1 cup old fashioned oats
    1/3 cup nut butter
    2 tablespoons chia seeds
    1/2 teaspoon cardamom
    1/4 cup shredded unsweetened coconut
    2-3 tablespoons cocoa nibs
  • Transfer mixture to a medium bowl and allow to chill in refrigerator for 15 minutes. Although energy mix will appear to be a bit dry, it should stick together to scoop out by the tablespoon. Squeeze together to form a 1" ball in palm of hand. Roll onto shredded coconut. Enjoy!

Single Serving Suggestions:
You can freeze what you don’t need now or store in an airtight container for a week. 
 
To make Paleo:  Remove the oats and nut butter from recipe.  Just note this will affect number of energy balls for recipe.
