Ingredients
Salad
- 1 cup elbow pasta, cooked to al dente and cooled
- 1 cup romaine lettuce, roughly chopped
- ¼ cup canned black beans, rinsed and drained
- ¼ cup cooked corn, try Trader Joe's Roasted Corn
- ⅓ cup bell pepper, diced
- 2 tablespoons cilantro, chopped
- cheddar cheese, grated but Queso Fresca crumbles works here, too
Salad Dressing
- ¼ cup picante sauce, mild, medium or hot
- 1 tablespoon greek yogurt , mayonnaise works here too
- 2 tablespoons sour cream
- ¼ teaspoon ground cumin
- ¼ teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon lime juice, freshly squeezed
Instructions
Salad Dressing
- Whisk to combine all ingredients for salad dressing in a medium bowl . Taste to adjust salt preference.1/4 cup picante sauce1 tablespoon greek yogurt2 tablespoons sour cream1/4 teaspoon ground cumin1/4 teaspoon chili powder1/4 teaspoon garlic powder1/4 teaspoon salt1/4 teaspoon lime juice
Salad
