Ingredients
 

  • ½ cup all-purpose flour, plus extra for work surface
  • ½ +⅛ teaspoon baking powder
  • teaspoon baking soda
  • teaspoon salt
  • teaspoon sugar
  • ½ teaspoon fresh sage , finely chopped
  • 1 ½ tablespoons cold unsalted butter, cut into small pieces
  • 4 tablespoons buttermilk, plus extra 1 teaspoon, if needed

Instructions
 

  • Heat oven to 450 degrees.
  • Spray a cookie sheet with cooking spray (if not using nonstick) and set aside.
  • In a small bowl, mix flour, baking powder, baking soda, salt, sugar, and sage.

    1/8 teaspoon baking soda
    1/8 teaspoon salt
    1/8 teaspoon sugar
    1/2 teaspoon fresh sage
  • Quickly cut in cold butter until lumps are pea size.
    1 ½ tablespoons cold unsalted butter
  • Sprinkle buttermilk over mixture and lightly combine with a fork until it just holds together and forms a soft dough. If needed, add remaining 1 teaspoon buttermilk.
    4 tablespoons buttermilk
  • Lightly knead dough in bowl 5 or 6 times. Cover and allow to rest 5 min.
  • Sprinkle 2 teaspoons of flour on a clean, flat surface. Divide the dough in half. Place dough on flour and gently pat each half into desired shape.
  • Place on baking pan and bake until biscuits are golden, about 14 minutes.
