Ingredients
For the Cake:
- 1 large egg
- ¼ apple sauce
- ¼ cup peanut butter
- 2 tablespoons honey
- 1 cup shredded zucchini
- 1 cup rice flour
- 1 teaspoon baking soda
For the Frosting:
- 2 tablespoons light cream cheese , at room temperature
- 1 tablespoon smooth peanut butter
Instructions
For the Cake:
- Preheat oven to 350 degrees. Grease an 8 inch by 8 inch baking dish or a 6-cup silicone mold (dog bone shaped or related).
- Mix all the wet ingredients together in a medium bowl.1 large egg1/4 apple sauce1/4 cup peanut butter2 tablespoons honey1 cup shredded zucchini
- Fold in flour and baking soda until just combined. The batter will feel quite thick and not runny like a typical cake batter.1 cup rice flour1 teaspoon baking soda
- Press into your baking dish or mold evenly and place in the oven to bake approximately 35 minutes. Check at 30 minutes with a toothpick. If toothpick comes out ‘wet’, check every 2 minutes until toothpick inserted is clean.
- Let the cake cool in pan about 10 minutes, then scrape sides and flip onto a cooling rack for another 10-15 minutes.
For the Frosting:
- Whip cream cheese and peanut butter till smooth. Set aside.2 tablespoons light cream cheese1 tablespoon smooth peanut butter
- When cake is slightly cool to the touch, frost and place in the refrigerator until ready to serve.
- This cake is best stored cooled and will keep for several days.
