Add all ingredients to a medium bowl and mix until well combined.
1 cup carrots
1/2 cup unsweetened applesauce
1 cup brown rice flour
1 large egg
Drop by rounded tablespoons onto a cookie sheet lined with parchment paper or on a nonstick cookie sheet. Gently flatten down with your fingertips to a 1/2″ thickness and place in 350-degree oven for 35-40 minutes or until slightly golden brown.
Allow to cool completely and store in an airtight container. Adding about 1/2 teaspoon of salt to the recipe is optional but will allow cookies to be stored a bit longer.
