Ingredients
- 1 cup carrots, grated
- ½ cup unsweetened applesauce
- 1 cup brown rice flour
- 1 large egg
Instructions
- Set oven to 350 degrees.
- Add all ingredients to a medium bowl and mix until well combined.1 cup carrots1/2 cup unsweetened applesauce1 cup brown rice flour1 large egg
- Drop by rounded tablespoons onto a cookie sheet lined with parchment paper or on a nonstick cookie sheet. Gently flatten down with your fingertips to a 1/2″ thickness and place in 350-degree oven for 35-40 minutes or until slightly golden brown.
- Allow to cool completely and store in an airtight container. Adding about 1/2 teaspoon of salt to the recipe is optional but will allow cookies to be stored a bit longer.
