For the Cake:
1large egg
¼apple sauce
¼cuppeanut butter
2tablespoonshoney
1cupshredded zucchini
1cuprice flour
1teaspoonbaking soda
For the Frosting:
2tablespoonslight cream cheese , at room temperature
1tablespoonsmooth peanut butter
Instructions
For the Cake:
Preheat oven to 350 degrees. Grease an 8 inch by 8 inch baking dish or a 6-cup silicone mold (dog bone shaped or related).
Mix all the wet ingredients together in a medium bowl.
1 large egg
1/4 apple sauce
1/4 cup peanut butter
2 tablespoons honey
1 cup shredded zucchini
Fold in flour and baking soda until just combined. The batter will feel quite thick and not runny like a typical cake batter.

1 teaspoon baking soda
Press into your baking dish or mold evenly and place in the oven to bake approximately 35 minutes. Check at 30 minutes with a toothpick. If toothpick comes out 'wet', check every 2 minutes until toothpick inserted is clean.
Let the cake cool in pan about 10 minutes, then scrape sides and flip onto a cooling rack for another 10-15 minutes.
For the Frosting:
Whip cream cheese and peanut butter till smooth. Set aside.
2 tablespoons light cream cheese
1 tablespoon smooth peanut butter
When cake is slightly cool to the touch, frost and place in the refrigerator until ready to serve.
This cake is best stored cooled and will keep for several days.
