Japanese Soba Noodles with Dipping Sauce

Ingredients
 

  • ¾ cup vegetable stock
  • cup soy sauce
  • cup mirin
  • 3.2 ounces (1 bundle) dried buckwheat soba noodles
  • 2 green onions, finely chopped
  • 1 tablespoon wasabi paste
  • 2 tablespoons daikon, finely grated

Instructions
 

  • In a small saucepan, combine vegetable stock, soy sauce and mirin. Bring to a boil then simmer for 5 minutes. Remove from heat and set aside to cool completely before serving.

  • Bring a pot of water to boil. When the water is boiling, slowly add noodles and stir to immerse all the noodles.
    3.2 ounces (1 bundle) dried buckwheat soba noodles
  • Bring the water back up to a gentle boil, then reduce to a simmer. Cook according to package directions, usually about 7 to 8 minutes. If the water starts to foam and boil over, add a ½ cup of cold water to bring the temperature back down.
  • With a colander, drain noodles then return them to the pot and fill it with cold water. Wash the noodles a few times until the water runs clear.
  • Drain the noodles and set aside to cool completely.
  • While soba and sauce are cooling, chop green onion, prepare wasabi paste and grate daikon.
    2 green onions
    1 tablespoon wasabi paste
    2 tablespoons daikon
  • Plate noodles and top with green onion. Place sauce in small bowls for dipping. Add wasabi and daikon to the sauce to taste. Dip cold noodles into the sauce as you eat them.
