Ingredients
 

Salad
  • 1 cup romaine lettuce, chopped
  • 1 cup elbow pasta, cooked and cooled...about 1/3 cup dried pasta for recipe
  • 10-12 cherry or grape tomatoes, halved
  • cup cucumber, halved and sliced
  • 1 thin slice of large red onion, then cut into strips
  • 5-6 kalamata olives, halved
  • ¼ cup red bell pepper, chopped
  • ¼ cup feta cheese, crumbled
Salad Dressing
  • 2 tablespoons olive oil, extra virgin
  • 1 tablespoons red wine vinegar
  • 1 wedge lemon, juiced
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt and pepper, each

Instructions
 

  • Cook pasta if not prepped ahead (about 1/3 cup dried for a single serving) 1 minute less than package instructions for a firm pasta. Rinse in cool water and set aside.
    1 cup elbow pasta
  • In a small bowl, whisk all salad dressing ingredients well.
    2 tablespoons olive oil
    1 tablespoons red wine vinegar
    1 wedge lemon
    1/2 teaspoon dried oregano
    1/4 teaspoon salt and pepper
  • For salad, layer all ingredients in order listed in a serving bowl. Drizzle with dressing. Enjoy!
