Set oven temperature to 400 degrees and line a baking sheet with parchment paper
Add bread crumbs to a medium mixing bowl and slowly blend in the milk allowing the breadcrumbs to absorb the liquid. This should sit a few minutes.
1/2 cup panko bread crumbs
1/4 cup whole or 2% milk
To the bread crumb mixture, add the beef, pork, egg, onion, garlic, herbs, cheese and salt and pepper and mix together with your hands until all ingredients are just incorporated.
1/4 pound 85% lean ground beef
1/4 pound ground pork
2 tablespoons yellow onion
1 medium egg
1 clove garlic
1/2 teaspoon dried basil
1 teaspoon dried oregano
1/2 tablespoon fresh parsley
1/4 cup parmesan cheese
1/4 teaspoon salt and pepper
Shape into 1 1/2 inch balls (just eyeball it) and place on cookie sheet, spacing evenly apart. You should be able to shape 18 or so meatballs depending on the size.
Place in middle rack of oven for 10 minutes. Remove and turn meatballs over to brown underside. Return to the oven for and additional 10-12 minutes. If you have a thermometer, internal temp in the middle of meatball should be 165 degrees. We love this digital thermometer.
